Mother Hubbard’s Cupboard: White Chicken Chili

For cold, wintery nights like tonight!

Ingredients:

  • 2 cans Corn – undrained
  • 2 cans Black Beans – drained and rinsed
  • 2 cans Rotel Diced Tomatoes – you choose the flavor (if this is too spicey you can replace 1 can rotel with regular diced tomatoes)
  • 2 Blocks Cream Cheese
  • Chicken (you decide how much and which part – we use breasts)
  • 1/2 packet dry ranch dressing
  • 1 Tsp Garlic Powder
  • 1 Tbl cumin
  • 1 Tsp Chili Powder (sometimes I omit)

 

Directions:

  1. place chicken on bottom of crockpot
  2. add other ingredients with cream cheese on top
  3. cover and cook on low 6-8 hours
  4. shred chicken
  5. stir
  6. eat deliciousness
