EZ White Chicken Chili

Ingredients:

  • 2 Tbl Coconut Oil 
  • 1 package McCormick Chili White Chicken seasoning (not gluten free)
  • 1 cup Water
  • 2 pounds Chicken Breast – cut into 1 inch slices
  • 1 can White Beans – undrained 
  • 1 can Garbonzo Beans – undrained

Directions:

  1. Heat coconut oil 
  2. add chicken pieces
  3. cook for 3-5 minutes until no longer pink
  4. stir in seasoning mix, water, beans.
  5. bring to a boil 
  6. cover. Reduce heat and simmer 10 minutes until Chicken is cooked through.
  7. stir occasionally 
  8. serve with cheese or sour cream

add on: (South of the Border Chicken Chili)

  1. add 1/2 c chopped bell pepper when cooking chicken
  2. 1 can black beans (drained and rinsed)
  3. 1 can diced tomatoes (drained)
  4. 1 can whole kernel corn (drained)
