Cheesy chicken and broccoli -Gluten Free Style

Crock pot for 8 hours:

  • 5 lb. Chicken breast
  • 1-1 1/2 cup Chicken broth
  • 1 block Velveeta cheese (16 oz.?)

When there is an hour left on the chicken, start making your rice – we did brown rice

While the rice is cooking – steam a bag of frozen broccoli

When broccoli and chicken are finished, combine them in a bowl.

To serve – lay a bed of rice on the plate and top with the chicken and broccoli mixture. Season with salt, pepper, red pepper flakes, and shredded cheese


*we now have all adult children and we love traveling together. Each couple is responsible for cooking a meal and sharing their recipe
